This goes really well with turkey or pork . Use the giblets , liver, kidneys etc from inside your turkey . Wash them well and put them in a good size saucepan with quiet alot of water . Bring to the boil and take the scum off the top then turn down to simmer . Add an onion chopped in half, some pepper corns ,salt and a little pepper and a little celery . After about 45 minutes pour liquid through a fine sieve into another saucepan . Then add a good amount or gravy salt or Bisto any flavour and stir well . With a spoon take some of the fat and brown jelly from the turkey tin and add this . I then add a liberal amount of sherry which is like a dessert wine and stir well and simmer until it thickens . Serve in a gravy boat while hot . Scrumptious
