Tonight it is Mexican food. Homemade cheese & chicken enchiladas; Spanish rice & refried beans. And a little ice cream to top off the meal.

We're eating very healthy tonight. Spanish salad with mixed greens; roasted corn niblets; chicken chunks & tortilla chips. Strawberries for dessert.

Just finished baking homemade vjovolate-custard twists for desert tonight. A baked egg-hsm-potato & veggie casserole for breakfast. Then time to thaw chicken for dinner.

Brunch was a bacon, Swiss cheese. omelet at 11 AM so no lunch, dinner was pizza and salad, since Sun. is relax/chill out day.
