Glad Trettondagensafton! I am working (cough cough) at home for 4 1/2 hours. bascially I am only checking email for students wanting to register. Other than that I am doing light housework, making twelfth night scones, and baking chicken to be turned into White chili for epiphany. I love that epiphany is a holiday in Sweden where Christmas lasts until St Knut's day.

Last night we snacked on the gourmet white chocolate sea salt popcorn I made Christmas Eve. Yum. :dinner:

:D Jolly it is simple:

Pop "mushroom popcorn kernels"
Sprinkle with sea salt
Pour on baking sheet
Sprinkle grated chocolate (any flavor) over popcorn
Let cool and munch!

oh my, that sounds too Christmas good. I take it "mushroom popcorn" kernals are large ones. Never noticed them, but we don't eat much popcorn. However, when I was making the "Undecorating day" snack mix once, I realized I was putting more effort into not eating popcorn than it would take to just make the popcorn. We were just deciding what to make this year

hm.........not sure about that added chocolate. ;-)
The twelfth night scones are now in the oven and I am about to start prep work for the football soup (White chicken chili). I was thinking that middle Eastern travel food would be good for epiphany. They showed couscous and lamb sausage on Swedish tv today. Have to remember that.

My diabetic nutritionist states chocolate, in small measure, is beneficial. Not a stickers bar mind you just pure chocolate.

It was. will be even better after it sits a day or two. I am also thinking next time to make some herbal scones to have with the meal, or some kind of biscuit. Becuase I tried to make it like tortilla soup (minus the tortillas), we had nacho chips. It worked.
I found a great blog (food wise that is) that said to Think of Epiphany dinner like The Arabian nights..........we had pretty much decided to do something middle Eastern next year. I also read that peas and beans are commonly eaten, some do a repeat of New Year's by but this time we are tired of ham, chicken, and turkey. I have been "working", cooking, and doing laundry all day. I am as tired as Santa on Christmas morning. I could fall asleep sitting up........ :sleephat:

Yeah but it is 6:12 in the evening. I was longing for the Days when the most I had to worry about on holidays was what color polish to put on my Nails and what I was going to wear. I was also just thinking how my mother managed to do holiday cooking but arrived at Church looking the worse for wear. My grandmother on the hand, did cooking, cleaning, and still arrived looking immaculate (sp) with even her Nails done. How did she do that? She must have had Christmas super Powers. I sure miss her this time of year.
