I am home late, and I admit I ate a cookie and some ice cream. Not exactly healthy fare but it tasted just great! :dinner:

I made a nice lamb and leek casserole last night. Steak and ale pie tonight. Ready made I'm afraid. My pastry is about as edible as boot leather.

Friday we had a Chinese takeout which I don't think we'll be doing again. The local place has been very hit or miss lately and I dislike wasting money like that. :razzberry:

Note to self; find out how to make your own chow mein! :D

Saturday we had baked spuds with cheese and bacon and tossed salad. Sunday was beef brisket that I cooked all day Saturday in the slow cooker. Yum!

Monday night was lamb and veg. Fish tonight I think.

Since it's the fourth, I'll be cooking the usual. BBQ chicken, potato salad, corn on the cob. It's just Byron and me so I"m not doing a huge spread. I just had to do BBQ though.

We had the usual 4th fare over the weekend so I am definitely not in the mood for hotdogs or hamburgers! So I made taquitos, tostadas and tacos tonight! :dinner:

Tonight, when I got home, I had a sink full of dishes & left over pork, potatoes, corn, and mexican food to pack up. I settled on 2 taquitos & 2 empadas because they were easy! The family was certainly well fed! :dinner:
